Apples and more apples.....




While at the grocery store this morning, I decided it was time to make Apple Crisp this week-end.  I will share my fabulous recipe with you.  It comes from the Quilt Cottage Cookbook, by the Iowa Quilters Guild.  It was given to me by my dear sister who is a farm wife in Iowa.  We have memories of many wonderful summer visits to her farm when my children were younger.  I went to school in Iowa when I got my nursing degree, so Iowa has a special place in my heart.  To make a long story short, while at the store this morning I decided I would buy 1 apple of a few different varieties and have a taste off.......I want to determine which apple I enjoy most and which one will give me the biggest bang for my buck!  I'll let you know.  I bought one variety I had never heard of before.  I usually use granny smith for pies and crisp.  The pie baker at Marie Calendars uses a granny smith, so once I heard that I was sold.


Streusel Topped Apple Crisp
5-6 apples peeled and sliced thinly.  Mix the apples with 1/2 cup of sugar, 1Tablespoon of flour and 1 tsp. of cinnamon.  Place apples in a 9x9 inch pan.
Streusel Topping
1cup of flour, 1 cup brown sugar, 1/4 tsp baking powder, 1/4 tsp salt, 1/2 cup butter and 2/3 cup of uncooked oatmeal.    Cut butter into flour, brown sugar and remaining dry ingredients.  Add oatmeal and sprinkle over the apples.  Bake at 350 degrees for approx. 45 minutes or until the apples are bubbly and tender.  YUM  This recipe came from Karen Flanscha of Cedar Falls, Iowa.   Karen I've wanted to thank you personally for this recipe many times.  It is delicious.
